According to a study released today, researchers
at John Hopkins Medicine in the John Hopkins University of Medicine show that low-carbohydrate diets like the Atkins are better at reducing systemic inflammation throughout the body than low-fat diets.

Participants in the study on low-carb diets lost an average of ten pounds more during the six-month study than those on a low-fat diet and reduced inflammation, a key marker for heart disease.

Lead investigator Kerry Stewart, Ed.D said either diet could lower heart disease risk, but the important factor was the amount of fat lost, especially belly fat.

Participants on the Atkins diet lost more abdominal fat overall.

Atkins dieters lost an average of 14.3 pounds of abdominal fat versus 8.4 pounds on the low-fat diets.

The study was done on healthy adults between the ages of 30 and 65 who were overweight or obese.

The National Heart, Lung and Blood Institute funded the study that was presented November 5, 2012 at the American Heart Institute Scientific Sessions.

Exercise was also a part of the diet plan for both sets of dieters.

A low carbohydrate diet is composed of mostly protein, fat and high-fiber whole foods.

This study is another vindication of proponents who claim that whole foods are better than packaged goods as a naturally healthy lifestyle.

Packaged cakes, cookies, breads, potatoes, rice and pasta quickly break down and turn to sugar.

The body stops burning fat to deal with the rise in blood sugar.

Fat then gets stored in the abdomen instead of being metabolized.

A naturally healthy diet contains high-fiber vegetables such as beans, peas. broccoli, turnip…

Stuffing adds an extra interesting element to any meal, but you don’t have to save your stuffing for Thanksgiving or even for the turkey!

Any of the stuffings in this article would also be delicious if used for a roast chicken dinner.

We especially love to add fruit and serve with pork steaks or chops, or even roast pork and gravy.

Generally, the amounts in these recipes will stuff a medium- to large-sized turkey for a family gathering.

As a general rule of thumb, use a third to half the recipe to stuff a chicken or to roast separately in a pan to serve with pork.

1. Cranberry and Walnut Stuffing

This recipe is a version of a traditional American recipe. Like many recipes for stuffing, the original recipe contained apples, but as apples are a higher carb fruit, we have substituted cranberries, which have the dual effect of making the stuffing lower carb than the regular recipe and also adding a little extra seasonal color and flavor.

Makes 15 (1/2-cup) servings

Ingredients

2 tablespoons salted butter

1-1/2 cups onion, chopped

2 cups celery, chopped

2 cups cranberries (fresh or defrosted if fresh-frozen)

1 cup walnut pieces

1-1/2 cups almond flour

1 pound ground pork

3 tablespoons lemon juice

2 teaspoons ground thyme

1/2 teaspoon salt, or to taste

1/2 teaspoon ground pepper, or to taste

Instructions

Melt the butter in a large skillet. Cook the celery and onion together until soft, about 10 minutes.

Mix the remaining ingredients in a large bowl, add the celery and onion mixture.

Use the mixture to stuff the turkey, weighing the bird before roasting to calculate the correct cooking time. Roast as directed on the package.

Nutritional Facts Per serving: 7.0g carbs, 2.8g fiber, 18g total fat, 26mg cholesterol, 7g protein, 120mg sodium, 216 calories

2. Pork, Sage and Onion Stuffing

This is a traditional English recipe. The advantage of this stuffing is that it contains no fruit, is particularly low in carbs, but still has a delicious flavor.

Makes 15 (3/4-cup) servings

Ingredients

2 tablespoons salted butter

1 large onion, finely chopped

2 pounds ground pork

1/2 cup almond flour

1 tablespoon ground sage

1/2 teaspoon salt, or to taste

1/2 teaspoon ground pepper, or to taste

Instructions

Melt the butter in a large skillet or saucepan, fry the onion until soft, about 10 minutes.

Add all the remaining ingredients and mix well.Transfer the mixture to a large bowl and mix to combine.

Weigh the turkey after stuffing to calculate the complete roasting time. Roast as directed on the package.

Nutritional Facts Per serving: 1.8g carbs, 0.6g fiber, 16g total fat, 48mg cholesterol, 11g protein, 123mg sodium, 196 calories

3. Apricot and Ginger Stuffing

Ingredients

4 tablespoons salted butter

1 large onion, finely chopped

2 cups almond flour

1-1/2 cups apricots, chopped (fresh or canned in water, drained)

1 teaspoon ground ginger

2 tablespoons fresh parsley, chopped

3 tablespoons lemon juice

1/2 teaspoon salt, or to taste

1/2 teaspoon ground pepper, or to taste

Instructions

Melt the butter in a large skillet. Add the chopped onion, cook for about 5-10 minutes until softened.

Add all the remaining ingredients, mix well. The mixture should come together and look fairly wet, but if it doesn’t, add a few tablespoons of water until it holds together in the pan.

Use the mixture to stuff the turkey. Weigh the stuffed turkey to calculate the complete cooking time. Roast as directed.

Nutritional Facts Per serving: 5.6g carbs, 2.0g fiber, 9g total fat, 8mg cholesterol, 3g protein, 101mg sodium, 113 calories

Mashed potatoes are a Thanksgiving staple, but they’re also notorious for being high in both calories and fat — and not the good kind, either.
It’s butter, cream, and more butter that traditionally give the dish its richness, but these ingredients are hardly necessary.

With a few simple swaps — and a secret ingredient — this lightened-up recipe will save on calories, fat, and yes, even carb counts.

Yukon gold potatoes are naturally creamy and sweet, and the skins taste like butter. If you can’t find yukon potatoes, substitute with yellow finns.

Ingredients

8 yukon gold potatoes, peel left on, cut into 1-inch pieces (about 3 cups)

4 large cloves garlic, peeled and quartered

3/4 large head cauliflower, separated into florets (about 3 cups)

1 1/2 tablespoons butter

1/2 cup chicken (or veggie) broth

1/3 cup nonfat Greek yogurt

Salt and pepper, to taste

For the garnish: Fresh chives, chopped

Instructions

Add potatoes and garlic to a large pot of boiling water, cook for about 10 minutes. Then add cauliflower; cook for an additional 7-10 minutes or until both the potatoes and cauliflower are tender.

Remove from heat, drain the contents of the pot and transfer mixture to a large bowl. Add butter, broth, yogurt, salt and pepper. Using a hand mixer, whip to desired consistency.

Garnish with fresh chives and serve.

If you’re overweight, losing weight can significantly reduce inflammation in your body, regardless if you lose weight with a low-carbohydrate or low-fat diet, a new study says.

Being overweight is known to increase inflammation in the body, which researchers say can lead to increased risks of heart attack or stroke.

“Our findings indicate that you can reduce systemic inflammation, and possibly lower your risk of heart disease, no matter which diet — either low carb or low-fat,” says researcher Kerry Stewart, professor of medicine at the Johns Hopkins University School of Medicine in Baltimore and director of clinical and research exercise physiology. “The important factor is how much weight you lose — especially belly fat.”

The researchers recruited 60 people, ages 30 to 65, who were either overweight or obese with excessive belly fat. For six months, subjects followed either a low-fat or a low carb diet while also participating in exercise training three times a week.

Subjects’ blood levels were also measured for three common markers of inflammation — C-reactive protein, interleukin 6 and tumor necrosis factor-alpha — at the beginning and end of the study. Researchers also tested for body weight, body mass index, and total body and belly fat.

Subjects who ate a low carb diet lost more weight than those on the low-fat diet — 12.7 kilos compared to 8 kilos. The low carb diet group also had a greater drop in body mass index and belly fat, while both groups increased their aerobic fitness by 20 percent….

Ruby Tuesdays has Cauliflower Mashed “Potatoes”!! It looks like mashed potatoes, its texture is similar to mashed potatoes and the taste is mashed potato-y enough to make those who are on a low carb diet happy. Top with chives (or whatever you normally like on your mashed potatoes) and you’ve got one heck of a side dish. Well here’s the recipe so you can find out for yourself just how wonderful this mashed potato substitute is.

Ingredients

1 head of cauliflower

3 tablespoons milk

1 tablespoon butter

2 tablespoons light sour cream

1/4 teaspoon garlic salt

freshly ground black pepper

snipped chives

Instructions

1. Separate the cauliflower into florets and chop the core finely.

2. Bring about 1 cup of water to a simmer in a pot, then add the cauliflower. Cover and turn the heat to medium. Cook the cauliflower for 12-15 minutes or until very tender.

3. Drain and discard all of the water (the drier the cauliflower is, the better) and add the milk, butter, sour cream, salt and pepper and mash with a masher until it looks like “mashed potatoes.” Top with chives.

So give them a go and see what you think of this low carb substitute for a great side dish!

About Low Carb Cooking

Around the world people are paying more attention to their bodies and their health than perhaps at any other time in history.

One method that has shown great success in helping people quickly drop those unwanted pounds is through low carb cooking and dieting.

This method of weight loss seems to have taken the world by storm promising quick results for the simple (or not so simple) lifestyle change of eliminating as many carbohydrates as possible from our diets.

The notion sounds simple on one hand and is appealing to not only women hoping to drop those vanity pounds but also men who welcome the idea of eating all the steaks they can handle throughout the year.

Low card cooking is becoming a way of life for many families as a result though the idea of this particular lifestyle change and the reality of it do on occasion seriously collide with one another.

If you are interested in dropping those unwanted pounds and keeping them off, this is a doubt that without a doubt gets results.

The problem is that you must stick to the diet in order for the results to remain consistent even after you’ve met your weight loss goals.

This means that you are not really embarking on a diet so much as a complete overhaul in the way you eat.

The excellent thing about low carb cooking is that it is so widely popular.

This means that you will have no trouble finding resources, tips, tricks, advice, and even amazing substitutes for those things you often miss most when engaging in the low carb lifestyle.

Popular stores such as Whole Foods and Trader Joes are great places to go for specific foods that are low carb in nature and designed to meet the chocolate or breading needs of those who feel more than slightly deprived by the rigorous restrictions of a low carb lifestyle.

Many mainstream grocery stores are also beginning to see the value of catering to this ‘high end’ market of consumers and offering a wider variety of low carb friendly foods to consumers.

You can find recipes that are low in carbs by the mouthful at your local libraries and bookstores around the world.

You can also find many resources on the Internet to help assist and encourage you in your low carb lifestyle incorporation.

In addition to the cookbooks, recipes, and encouragement you also need to weed out the fact from the fiction when it comes to low carb cooking.

The best way to do this is to go straight to the source.

If you are going to incorporate this lifestyle altering diet into your way of life, you want to make sure that you are following it to the letter and not some knock off version that may not be as effective.

When it comes to low carb cooking you have the perfect excuse to use your grill well and use your grill often.

In fact, I highly recommend a George Foreman grill (or some similar knock off) for your home for those days when grilling outside simply isn’t an option.

Around our house, those are the days when the snow reaches the bottom of the grill but we are the exception rather than the rule.

Most importantly about low carb cooking you should keep your goal in mind.

If you aren’t making progress, check what you are doing and adjust your cooking and eating accordingly.

According to Chris Powell, carbs are as addictive as drugs and the main reason why some people cannot lose weight.

“The body is actually wired to eat carbohydrates,” says Chris Powell. “But unfortunately the reaction
a lot of people have to these carbs is very similar
to the same kind of reaction people have to drugs—when you start eating them it’s impossible to stop. It’s no wonder that so many people are struggling when they are trying to stick to their
diet”

Chris Powell is the trainer and transformation specialist on ABC’s “Extreme Makeover: Weight Loss Edition,” and author of the New York Times bestselling book “Choose to Lose.”

Chris’s focus is to tell people about his 7-day plan to cut your carb cravings and teach you how that by choosing the right carbohydrates at the right time can lead to significant weight loss.

“This 7-day plan works—you will cut your cravings and you will see dramatic weight loss,” promises Chris Powell.

“Why do you think that cutting back carb cravings is so essential if you want to lose weight for good,” Dr. Oz asks his special guest on a recent episode of The Dr. Oz Show.

Chis Powell explains that our bodies crave salt and sugar and the crunchy texture that is so easily available today in processed foods everywhere, that it causes us to eat more of those kinds of fattening foods than we should in comparison to eating healthier foods that we enjoy such as eating lean meat.

He tells viewers that the processed carbohydrates we eat today are quickly converted into sugar, which then causes our blood sugar levels to spike and turn on the pleasure center in our brain that gives us that “feel-good” sensation not unlike taking cocaine.

Unfortunately, however, that spike goes down relatively rapidly causing our brain to want more of those good feelings that in turn leads to eating more and storing the extra calories as fat.

Chis Powell offers what he believes are the 3 reasons why we overeat these types of carbs:

Reason #1—Being around people who eat processed carbs. Chris Powell explains that studies have shown that being around people (such as your spouse or friends) who eat these type of carbs will induce you to eat with them as well because snacking on comfort foods is a social cue that people engage in with one another.

Reason #2—Boredom. Chris Powell describes eating while bored as “blind binging” or “hypno-binging” where while watching TV or driving long distance that you get into that zone where you are eating without even tasting or realizing what you are doing. And before you know it—that bag of chips is empty because you unwittingly ate the whole thing.

Reason #3—Going out to eat. According to Chris Powell, going out to eat fairly often is something that has developed over the past 20 years into an eating event that rather than being just once every two weeks, has turned into an almost daily habit for many. With restaurants now offering cheaper meals and larger portions, coupled with more social cues to eat more around friends, eating out has figured prominently in eating too many dishes filled with processed carbohydrates…

Low Carb Dieting Plans –
How To Choose A Low Carb Dieting Plan That Works

It has been discovered that carbohydrates cannot be cut off from consumption completely although they largely contribute to every weight issue you may want to talk about.

Thus following a low carb diet plan should really be the way to consider losing weight. Below you will discover the low carb dieting plan that works for you whether you are a man or a woman with weight issue.

Low Carb Diet Plan for Men

As a man, what diet plan should I follow? Your low carb diet plan should be a balanced diet. Anything less than this is not sufficient. Low carb diets are popular among men because they don’t require you to count calories or eat lots of vegetables, or “rabbit food.” Low carb diet plans restrict carbohydrates and, instead, focus on proteins and fats. Low-carb dieters report rapid weight loss, increased feelings of satiation and reduced appetite.

Whether you are looking for healthy weight loss or building your body, a wide combination of low carb foods should be consumed. However you should choose any low carb diet plan that works for you and according to your likes and eating habits. Be sure that meals are thoroughly planned well in advance so that you do not eat junk due to unavailability from poor planning.

Men like low-carb diets because they are easy to follow and allow them to still eat many of their favorite foods. As pointed out in an editorial in a 2005 issue of the “American Journal of Clinical Nutrition,” diets high in protein (and subsequently low in carbs) have been proven in a number of studies to satiate people more than other low-calorie weight loss plans. Low-carb diets tend to be lower in calories because you eliminate most foods that are calorie-dense and high in sugar.

Also, be sure that your consumption of carbohydrates is equally consumed over each meal you take in: breakfast, snacks, lunch, and dinner. For example, you can start with a good breakfast containing ingredients for a balanced diet like eggs, low carb biscuits , milk and cereal. Obviously do not eat fast foods as they are nothing but junk. Preparing your meals yourself is always the best option.

Low carb diets ask you to avoid refined carbohydrates and many even ban fruits and vegetables. The focus is on eggs, meat, fish, poultry and dairy. Low carbohydrate vegetables such as lettuce, spinach and broccoli may be enjoyed, and some low carb diets allow small servings of whole grains such as brown rice. In general, calories and fats are not a concern—it is the carbs you avoid. To address the problem of over-consuming saturated fats, men should select lean protein sources whenever possible. Options such as skinless, white-meat poultry; bison; extra-lean ground beef; and egg whites contain little saturated fat, but still offer the benefits of no carbs.

Men following a low carb diet may not have to measure each portion, but they should still follow nutritionally sound principles to ensure healthy weight loss.

Low Carb Diet Plan for Women

Low cab diet plan are even more popular among women than men and most prevalent among women over 45. Achieving weight loss is always quite difficult for this age of women (actually men also!). For women over 45, low-carb diets may offer health benefits in addition to weight loss. The Nurses Health Study followed more than 82,000 women for 20 years. The Harvard School of Public Health evaluated the results to examine the relationship between low-carbohydrate diets and coronary heart disease. The researchers reported in “The New England Journal of Medicine” that low-carbohydrate diets weren’t associated with increased risk and that women on low carb diets who opt for vegetable-derived proteins and fats may experience a moderate risk-reduction for coronary heart disease. Thus, you need to find the low carb diet plan that works for you.

Try a low carb diet plan to keep your body fit and trim. Recommended carbohydrate intake for women should be about 25 g a day. If you cut back to 20 g, you will begin to lose weight. The most difficult part of low carb dieting for women is the week before their menstrual cycle when they sometimes crave sweets, which are not allowed.

Enjoy a breakfast with more eggs, whole grain oatmeal, and yogurt or fruit juice. Items like a turkey sandwich on wheat bread, a salad with beans, vegetables and cheese, light soup, lean meat and brown rice can be included in your lunch and dinner. Eggs should be the staple of your breakfast meals. One large egg has only .6 g of carbohydrates. A pat of butter has none. You can have two eggs lightly fried in butter for only 1.2 g. An ounce of low-fat milk has about 1.4 g, so on alternate days you can scramble eggs for a total of 2.6 g of carbohydrates.

Lunch is a good time to get your salad veggies. Good low carb choices for greens include celery, chicory, cucumbers, endive, escarole, iceberg or romaine lettuce and radishes. Mix and match daily to give yourself some variety. As long as you keep your portions of each to less than ½ c, you won’t consume more than 5 g of carbohydrates. Other options offering more protein include chicken salad, tuna salad or ham salad.

At dinner, any pasta or starchy vegetables will but you over 20 g of carbohydrates for the day. That doesn’t mean you can’t have a healthy meal. Fish, poultry, seafood or lean meats have virtually no carbohydrates per serving. Some vegetables are somewhat higher than others. Asparagus, broccoli, cauliflower, spinach and zucchini are low. Avoid peas and corn, and any sauces, which often have a flour base. If you concentrate on protein during your evening meals and balance it out with more vegetables, you can have hearty portions, feel full, and consume no more than 5 g of carbohydrates.

If your goal is to restrict your diet to 20 g of carbohydrates daily, you’ve now consumed approximately 16 g at the outside. This leaves you 4 g left over for the inevitable snack attack. Your best bet is to go with healthy choices, such as olives–4 g for five large–string cheese or crunchy raw vegetables. Unfortunately, most fruits will put you over your limit because they are high in sugar content, but they also have fiber content which detracts from their total carbohydrate total. Apricots, blueberries, cantaloupe and honeydew melon are good choices. Nuts, fruits, peanut butter, cheese or any type of low carb snack bars can be enjoyed as morning and evening snacks. Try to eat as much as whole and unrefined carbohydrates as possible. Avoid eating white pasta, white bread or white rice.

Final Word

Try not to be too extreme on your low carb diet plan as this may cause loss of sleep, headaches, nausea and other health consequence. Thus , if you want to live a healthier lifestyle, you should choose a low carb diet plan that works well for you.
