Low Carb Bread Recipe
This is a bread machine recipe. Whisk liquid ingredients in a separate bowl first to ensure proper blending. Break eggs into a 2 cup measuring cup and add water before mixing the liquid ingredients.
1 cup warm water
2 tbsp butter (I use light)
1/4 cup splenda
1/2 cup soy flour
2/3 cup ground flax seeds
1 and 1/2 cup vital wheat gluten
2 tsp active dry yeast
Bake at the basic setting. The DH just made a loaf, but had to make a couple substitutions. He was 1/4 cup short on the gluten so put in oat bran hot cereal instead. I didn’t have soy flour so used almond meal instead too. hmm… I am thinking the hot cereal would require a smidge increase on the liquids, but I’ll let you know how it turns out. A slice with the substitutions mentioned logged in at 90 calores, 5 carbs, and 7 protein and this is for 1/20th of a loaf. I bet the soy four wold be a lot lower in cals then the almond meal.
