Low Carb Diet Plan- Sweet Potato Rounds

There are times when I want something for dessert or a snack that seems decadent by its taste and texture. When the weather starts to cool down, somehow that is when I seem need this kind of comfort food.  Fortunately, I tend to only want a few bites.  But, I really don’t want to blow the day fat, carb and calorie-wise.  And, I need the solution to be easy.  That means I want it to take under 5 minutes to make.   

I’ve seen a few variations on this through the years.  But I really like my version better.  It’s sweet but not too sweet. It tastes like pumpkin pie.  And there is something extra done to cause it to help satisfy your hunger such that you can make it to the next meal without feeling hunger pangs. That something extra is a tiny bit of olive oil (per serving).  Let’s face it, when it gets to that point, if you are at all stressed, there is a much greater chance that you will grab something else that you really shouldn’t eat.  

I’m going to give you the recipe for eight servings.  This will let you share the rounds with someone or let you have enough for a week (assuming you have one a day).

Here we go.

1 sweet potato (about 8 inches long)

1 T olive oil

1 T honey- make sure it’s not crystallized

Pam (or equivalent non-stick spray)

Dash of cinnamon

 

Set an oven to 350 degrees (I actually like to use my toaster oven for this).  Wash the sweet potato and slice it into eight even sections ( about 1″ thick).

 

Spray the bottom of  a small pie tin or cake pan with non-stick spray.  Place the sweet potato slices onto the sprayed surface.  Mix the olive oil, honey and a dash of cinnamon in a very small bowl or cup.  Drizzle the mixture over each of the slices evenly.  Cook for 30 minutes or until done (has light golden brown top and a mashed potato consistency).

 

Eat immediately or chill.  Both ways are delicious. You can choose to eat it as you would a cookie, when it’s chilled, because it stays together quite nicely when you pick one up.   Otherwise, you may want to try using a small demitasse spoon to eat it. You can savor every morsel!
